April - Drooling During Passover

My cousin Lauren always likes to take part in my New Year's resolutions and I love when she does! The first weekend of April, she came to Columbus for a visit and we went to 3 new restaurants - we basically eat our way through her visits. The first on our list was brunch at SuperChef's downtown, splitting the Reese Cup Pancakes. They were as delicious as they look. Later, we went to Sweet Carrot for lunch, where I had mac and cheese topped with brisket. It was so good that my mouth is watering right now just thinking about it (which is cruel, since I'm writing during Passover - but more on that down in the recipe section). The final stop in our trifecta was Hot Chicken Takeover for lunch before Lauren left. I impressed the man next to me by getting the hot and having no problem with it (and clearly from the picture, I got double mac instead of slaw).

Recipe: Passover Mac and Cheese
I found this recipe as Passover Mac and Cheese, but the description Matzo Brei Mac and Cheese is much more fitting. I used this recipe, but used vegetable oil instead of olive oil (didn't have olive oil on hand) and baked for 20+ minutes uncovered. The cuts in the picture were me seeing if it was done after 15 minutes, like the recipe said - it was not. This recipe is okay - not great, but it is because of the matzo farfel. If it were pasta or potatoes instead of matzo farfel, I think I'd like it more. But, it is something different for Passover and a success. I was able to finish most of it by eating it as a snack at work and as a supplement to my dairy dinners (I don't mix milk and meat during Passover - this is actually a more challenging restriction than nothing leavened). The best part of this recipe is clearly the Temp Tee cream cheese (if you're not familiar with Temp Tee, you're lucky. I wish I didn't know how amazing it is. And now I'm drooling again.)

More like a cheesy matzo brei bake than anything else.


Little nagging task: Fix garage door emergency release lock
*BONUS Little nagging task: File*
When I bought my condo, the seller was extremely organized, but I soon came to realize one piece was missing - the emergency release lock key for the garage door. He was the original owner of the condo and said he had never received it. After a call to the manufacturer and emails with the condo association, my only option was to replace the lock. The vendor told me it was easy and assured me I could install it myself. I immediately added this to the "Dad - Condo" list I have constantly building in my phone. After Leslie and Matt's wedding and out of town family left, my parent's came to my condo and I put my dad to work, where he soon realized that the lock is decorative and does not release the door. The only emergency release is from the inside. So, I woke up early and marched myself back to return the lock.

While this counts as crossing something off the list, I challenged myself to complete another task, since the last one was kind of a bust. So, I filed a year's worth of papers (maybe a year+). And, in true Sara fashion, when I finished filing, I came up with an even larger filing project (to be completed at a later date i.e. when I order what I need from Amazon).


Habit: Drink 64oz of water daily
I did a whole lot better than this last year, when I was incentivized by stickers in a challenge with coworkers. This month, I started off strong. And then, I was not so diligent. I have a plan on how to make this a habit a success, especially during the week, and I was more successful at implementing it the last week of the month. In better news, I got an early jump on next month's habit...
