100th post!!! Less than 24 hours after matzo toffee epic fail comes matzo toffee EPIC WIN! It is delicious. I was worried I would need to make 2 batches, but one pan turned into 3 full containers. I think that should be enough to share. All I can say is, besides the Seders, this is the first matzo I've eaten so far this Passover (matzo balls obviously don't count). I was so excited to try this again, that I didn't take the time to make my matzo pizza tonight. And I can assure you that NONE of the containers of matzo toffee will be staying in my apartment. It is far too good and far too addicting - this coming from a girl who barely has a sweet tooth!
It was refreshing to work with caramel again - I hadn't used it in 6 years. I had never made my own, but it was easy (the only successful part of both matzo toffee attempts). Like David said on Sunday, once a candy maker, always a candy maker...
